The fall season is the best time to enjoy one of the most nutritious and flavorful seeds around. Save the seeds from your Jack-o-lantern for a healthy and tasty treat. Consider these facts about pumpkin seeds, also known as pepitas:
- Great source of manganese, magnesium, phosphorus, tryptophan, iron, copper, vitamin K, zinc, protein

Pumpkin seeds are generally available in prepackaged containers or bulk bins. Make sure there is no evidence of moisture or insect damage and that they are not shriveled. Store in an air tight container in the refrigerator.
To make your own pumpkin seeds, wipe off excess pulp and spread evenly on a paper bag to dry overnight.
