Soak dried fruit overnight in fresh squeezed orange juice in refrigerator (or skip this step if you like).
Preheat oven to 375 degrees F. Butter the loaf pan.
Beat butter and honey in mixing bowl on low for 1 minute or until completely mixed.
Add eggs and mix 1 minute or until smooth.
Add bananas and zucchini. Mix 1 minute or until smooth.
Add baking soda, salt, cinnamon, ginger, nutmeg and mix on low 1 minute or until combined.
Stir in the rest of the fruit, juice, zest, and nuts; then mix in the flour.
Pour batter into loaf pan and bake for 15 minutes. Reduce oven heat to 350 degrees and bake for 45 minutes, or until toothpick inserted in the center of loaf comes out clean.
Remove the bread from the pan and cool on rack.
Don't let the long list of fruits scare you away. Try it with a mix fruits and nuts you enjoy. The more fruit you add, the less sweetener you need. Almond flour can also be used for those avoiding gluten from grain flour.
