Ingredients

  • 3 medium sweet potatoes
  • 3/4 cup coconut milk
  • 1 TBS minced fresh ginger
  • 1/2 tsp sea salt

Sweet potatoes provide a mix of nutrients that regular potatoes don't. Try mixing it up with this tasty recipe.





Mashed Sweet Potatoes

Delicious without gravy
  1. Bake sweet potatoes at 425 until tender (about 1 hour). Check by pricking with a fork.
  2. Peel and mash.
  3. Add coconut milk, ginger, and salt. Stir well.
  4. Warm on the stove or in the oven.
