3/4 cup coconut milk
1 TBS minced fresh ginger
1/2 tsp sea salt
Sweet potatoes provide a mix of nutrients that regular potatoes don't. Try mixing it up with this tasty recipe.
Mashed Sweet Potatoes
Delicious without gravy
Bake sweet potatoes at 425 until tender (about 1 hour). Check by pricking with a fork.
Peel and mash.
Add coconut milk, ginger, and salt. Stir well.
Warm on the stove or in the oven.
